Banana coconut Vietnamese pudding. ▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫ I love this recipe. Banana and coconut are my favourite fruits. What could be better than a dessert that combines the two of them. I have to confess that I have it many times for breakfast. ▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫ Ingredients for 4 servings: ✅1 can coconut milk ✅3 plantain 1/2 cup water ✅5 tbsp tapioca pearls ✅1/2 cup raw peanuts ✅Stevia (any other sweetener) ▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫▫ Method: ✅Place the tapioca perks in a bowl with warm water. Let them soak for 15/20 minutes. ✅In a pan add the coconut milk and water and heat at low temperature to simmer. Stir until both are well mixed. ✅Cut the banana in thick slices and add it into the pan with the coconut milk. Cook for 5 minutes. ✅Add the tapioca pearls and cook for another 15 minutes. ✅Toast the peanuts in a pan with some salt. Crash the peanuts and sprinkle on top before serving. I have been out of town for the last 4 days and honestly my back feels so stiff, achy and painful. I have been sitting in the car, boat, lounge chairs, laying in different beds, riding bikes and wrangling little boys! I just wanted to lay in bed all day if I could! But I tell you want, I dragged myself out of bed and had my typical boring breakfast and got my butt to the gym. I feel so much better but it was so hard to do it. My tip here is get up and move, every little bit counts and you will feel so much better after and that’s what matters. I know people say this all the time but it’s true! Also it is ok to eat the same things if they keep you full and satisfied and get you going. Morrocan spiced turkey meat balls. 😋 Recipe: *Put turkey mince into a bowl with finely chopped onions, salt, pepper, paprika and a good helping of cinnamon. *Mix well and leave to sit for ten minutes. *Take the mince in ball shape and lightly fry over for a couple of minutes on each side. *Once all the balls are fried over place them on a tray in the oven. Sauce: *chop onion and garlic and lightly fry over. *Add a good helping of Chilli and all the spices in the meat balls and cook for 10 minutes. *take the sauce and tip it over the turkey balls and cook for an additional 5 minutes. Rice: I fry over my basmati rice with chilli and turmeric before adding water and stock.
