Tahini vegan bowl 😍🤤 This tahini dressing is kind of my go to lately. Veggie bowls like this are easy, you can easily roast/sautee any veggies in your fridge, add some quinoa, maybe a protein of your choice...and you have a nutritious meal. The main thing is to have a light sauce to tie it all together. . . • . 👩‍🍳 Dressing: Blend the following (2 Serv.) 🔸4 tbsp Lemon juice 🔸4 tbsp EVO. 🔸4 tbsp cold water 🔸2 tbsp tahini 🔸1-2 garlic cloves 🔸½ tsp harissa spice from @seasonalityspices 🔸¼ tsp salt. . • 👩‍🍳 Tip: no blender? Just muddle the garlic, combine everything in a jar and shake well. . • 👩‍🍳 Quinoa on the bottom, chop Persian cucumbers, sautee mushrooms in EVO and garlic powder, roast beef peppers on open flame ( gas stove top) and chop. Sautee minced sml garlic in 1 tsp EVO, add diced cherry tomatoes cook covered for 3 minutes on med heat, then add diced Eggplant, squeeze a lemon, salt and pepper to taste and cook for another 4-5 minutes.
